I'm starting up a food truck and intend on habing a shotgun in the trailer, assuming my employees are not felons is it lega for the firearm to be accessible to my employees?

Yes, in the state of Texas you may carry a shotgun in your motor vehicle, regardless of your motor vehicles use.

Does the long gun, whether shotgun or rifle, have to be concealed or locked up in the vehicle or can it be in a gun rack in my truck?

No, it does not have to be locked up. There are no restrictions to where it can be inside the vehicle.
